Eggnog Coffee Crumble Cake
Ingredients
Coffee cake:
½ cup butter, softened
1 cup granulated sugar
2 large eggs
1 cup Producers Premium Old Fashioned Eggnog
1 cup sour cream
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
Streusel:
⅔ cup granulated sugar
2 Tablespoons all-purpose flour
2 Tablespoons butter, softened
½ teaspoon ground cinnamon
½ cup chopped pecans
Eggnog glaze:
½ cup powdered sugar
1 Tablespoon Producers Premium Old Fashioned Eggnog
Instructions:
Preheat & Prep: Start by heating your oven to 350°F. Prepare a 9×13-inch pan by spraying it with non-stick spray and set it aside.
Prepare the Cake Batter:
- In a large mixing bowl, cream the butter and sugar together until smooth and fluffy.
- Beat in the eggs one by one, ensuring each is fully incorporated before adding the next.
- In a separate bowl, mix the eggnog, sour cream, and vanilla extract.
- In another bowl, whisk the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed butter mixture, alternating with the eggnog mixture, and beat until smooth.
Make the Streusel Topping:
- Combine the sugar, flour, softened butter, and cinnamon in a small bowl until crumbly.
- Stir in the chopped pecans.
Assemble & Bake:
- Pour the cake batter into the prepared pan and spread evenly.
- Sprinkle the streusel mixture on top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Add the Glaze:
- While the cake cools slightly, mix the powdered sugar and eggnog until smooth.
- Drizzle the glaze over the warm cake and serve.
